Recipes Using Homegrown Green Stevia

These recipes use whole dried leaves (for the tea) or Green Stevia Powder (for the custard). Both can be purchased or made from homegrown stevia leaf (see Choosing Stevia Products for more about shopping for stevia).

 

Simple Stevia Tea                                      yields 1 cup

from “Growing and Using Stevia”

 

·        1 cup water

·        1 teaspoon Dried Stevia Leaves, slightly crushed (a few leaves)

·        other dried tea herb leaves as desired (optional)

 

            Place the water in a saucepan and add the leaves either in a tea ball to avoid straining, or without. Bring to a boil, then turn heat down and simmer for 3 minutes. Strain and serve.

 

 

 

Baked Custard                                          yields 5 servings

 from “Growing and Using Stevia”

 

·        3 extra large eggs 

·        1 ½ cup milk (soymilk or rice beverage may be substituted) 

·        1 ¼ teaspoon Green Stevia Powder 

·        1 ½ teaspoon vanilla extract 

·        1/8 teaspoon cinnamon 

 

Whisk the eggs. Add remaining ingredients and whisk again. Cover and chill one hour to blend flavors. Whisk briefly. Pour into 5 custard dishes. Place dishes in a flat baking pan. Pour very hot water around the dishes to a depth of one inch. Bake at 325 degrees about 50 minutes or until a knife inserted near center comes out clean. Chill and serve.

 

 

 

Chocolate Milk Shake                       Yields 2 servings

from “Growing and Using Stevia”

  • 2/3 cup frozen bananas, cut into pieces
  • 1 cup milk (soy or rice beverage may be substituted)
  • 2 teaspoons cocoa powder
  • 2 teaspoons Green Stevia Powder
  • ½ teaspoon vanilla extract

Place half the banana pieces and remaining ingredients in a blender bowl. Process on medium, then increase speed to the high setting. Gradually add remaining banana pieces and process until smooth. Serve immediately.

Tip: Freeze bananas the day before using. Peel, break in half and drop in a plastic bag. Seal and place in freezer.
