Grandma's Apple Pie Yields one 9 inch pie
For a special occasion, top with whipped cream.
- Pastry for a 9 inch, 2 crust pie
- 6 cups pie apples, peeled & thinly sliced
- 1 or 2 teaspoons fresh lemon juice
- 1 1/2 teaspoons Stevia Extract Powder
- 2 to 3 tablespoons flour (white or whole wheat pastry)
- 1/4 teaspoon nutmeg
- 1 teaspoon cinnamon
- Dash of cloves or allspice
- 2 tablespoons butter
Fit bottom pastry into a pie dish. In a large mixing bowl sprinkle lemon juice over apples and stir to mix. In a cup, stir together stevia, flour, nutmeg, cinnamon, and cloves. Sprinkle spice mixture over apples and carefully stir to coat the apples. Pile apples and carefully stir to coat the apples. Pile apples into the crust. Dot with butter.
With water, moisten the outer rim of the lower crust. Place upper crust on pie and crimp edges together. Slit top of pie to allow steam to escape. Place on a cookie sheet. Bake at 350 degrees in a preheated oven for 55 to 60 minutes. Aluminum foil may be placed over the pie during the last 15 minutes to prevent over-browning.
Cool on a rack, cover and leave at room temperature overnight or refrigerate if you prefer.
Tomato Ketchup Yields 1 pint ketchup
Thick and lightly spiced, with a rich tomato flavor
- 2 3/4 cups or 2 cans (10 3/4 ounce cans) plain tomato puree
- 1/8 teaspoon allspice
- 1/4 teaspoon cinnamon
- 1/2 teaspoon dry mustard
- 1/8 to 1/4 teaspoon Stevia Extract Powder
- 1/2 teaspoon salt
- 1/4 teaspoon onion powder
- 1/8 teaspoon garlic powder
- 2 tablespoons cider vinegar
Homemade tomato puree needs to be as thick as store bought applesauce. If yours is too thin, simmer over low heat to reduce before measuring. Mix all ingredients in a medium saucepan. Stir over moderate heat a few minutes until mixture bubbles up. Reduce heat to low and cover with a lid in a tilted position, allowing steam to escape.
Continue to cook and stir occasionally for 30 to 45 minutes or to thicken as desired.
Pour into a pint jar and cool to room temperature. Cover and refrigerate. Use within 2 weeks. Ketchup may also be frozen.
